Ingredients
For the Spiced Tomato Chickpea Curry:
- 2 cans (15 ounces each) chickpeas (garbanzo beans), rinsed and thoroughly drained
- 2 tablespoons extra-virgin olive oil (or neutral cooking oil)
- 1 large yellow onion, finely diced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, peeled and finely grated
- 1.5 teaspoons ground cumin
- 1.5 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1/2 teaspoon chili powder (or cayenne pepper)
- 1 teaspoon fine sea salt
- 1/4 teaspoon freshly cracked black pepper
- 1 can (14.5 ounces) fire-roasted diced tomatoes with juices
- 1 cup low-sodium vegetable broth
For the Greens & Serving:
- 3 cups fresh baby spinach leaves, loosely packed
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 1/3 cup fresh cilantro leaves, finely chopped
- 3 cups cooked basmati rice, warm (or warm garlic naan)
Equipment
- Deep stainless steel skillet
- Wooden spoon or spatula
- Potato masher
- Colander
- Chef's knife and cutting board
- Measuring spoons and cups
Instructions
- Open 2 cans of chickpeas, pour into a colander, rinse thoroughly under cold running water, and drain well.
- Heat 2 tablespoons of extra-virgin olive oil in a deep stainless steel skillet over medium heat until shimmering.
- Add the finely diced yellow onion to the skillet and sauté for 4 minutes, stirring with a wooden spoon, until soft, translucent, and light golden at the edges.
- Stir in minced garlic and grated fresh ginger, cooking for 1 minute until fragrant.
- Add ground cumin, ground coriander, ground turmeric, garam masala, chili powder, salt, and black pepper to the skillet, stirring constantly for 1 minute to toast the spices until fragrant.
- Pour in the canned fire-roasted diced tomatoes with their juices and 1 cup of low-sodium vegetable broth, stirring to scrape up any browned bits stuck to the bottom of the skillet.
- Add the drained chickpeas to the skillet and stir well to submerge them in the tomato-spice mixture.
- Bring the curry to a gentle simmer over medium-high heat.
- Reduce heat to medium-low and simmer uncovered for 8 to 10 minutes, stirring occasionally, until the gravy thickens and the chickpeas absorb the rich spices.
- Use a potato masher or the back of a wooden spoon to lightly crush roughly 1/4 cup of the chickpeas against the bottom of the skillet, which naturally thickens the sauce.
- Add 3 cups of fresh baby spinach leaves to the skillet and gently fold into the warm curry for 1 to 2 minutes until the spinach is completely wilted and bright green.
- Turn off the heat and stir in 2 tablespoons of fresh lemon juice and half of the chopped fresh cilantro.
- Divide warm basmati rice among 4 cream stoneware bowls, top with hot chickpea curry, garnish with remaining fresh cilantro, and serve warm.

Chef's Tips
- Crushing Chickpeas for Body: Crushing a quarter cup of chickpeas with a potato masher directly in the pan releases starches that bind the gravy into a luxurious, thick sauce without needing heavy cream or flour.
- Fire-Roasted Tomato Upgrade: Using canned fire-roasted diced tomatoes adds subtle smoky depth that elevates a quick weeknight curry into a restaurant-quality meal in minutes.
- Freezer Friendly: This chickpea curry freezes beautifully! Store cooled curry in airtight freezer containers for up to 3 months. Thaw overnight in the fridge and simmer gently on the stove with a splash of broth before serving.
