Equipment

- Wooden spoon or silicone spatula
- Fine-mesh strainer
- Box grater or microplane
- Chef's knife and cutting board
- Measuring spoons and cups
Instructions
- Place 1 cup of dry split red lentils into a fine-mesh strainer and rinse thoroughly under cold running water until the water runs clear, then drain well.
- Heat 1 tablespoon of coconut oil in a matte-black enamel Dutch oven over medium heat until melted and warm.
- Add the diced yellow onion to the Dutch oven and sauté for 4 minutes, stirring frequently with a wooden spoon, until softened and translucent.
- Add the minced garlic and grated fresh ginger to the onion mixture and cook for 1 minute until fragrant and light golden.
- Stir in ground cumin, ground turmeric, garam masala, smoked paprika, chili powder, and fine sea salt, stirring continuously for 1 minute to toast the spices until aromatic.
- Pour in the rinsed red lentils, canned crushed tomatoes, full-fat coconut milk, and vegetable broth into the Dutch oven.
- Stir all ingredients thoroughly to combine and bring the liquid to a gentle boil over medium-high heat.
- Reduce heat to medium-low, partially cover the Dutch oven with its lid, and simmer for 12 to 15 minutes, stirring occasionally.
- Cook until the red lentils break down into a thick, velvety, creamy consistency and absorb most of the flavorful liquid.
- Remove the Dutch oven from heat and stir in 2 tablespoons of fresh lime juice and half of the chopped cilantro.
- Taste the dahl and adjust salt or lime juice if desired.
- Ladle the hot red lentil dahl into 4 cream stoneware bowls over warm basmati rice or alongside warm naan bread.
- Sprinkle with remaining fresh cilantro and serve warm with additional lime wedges.

Chef's Tips
- Why Split Red Lentils Work Best: Split red lentils break down quickly during simmering, transforming into a velvety sauce without needing any blenders. Brown or green lentils hold their shape and take much longer to cook, so stick to split red lentils for this fast 25-minute dahl.
- Balancing Richness: Full-fat coconut milk creates classic silky mouthfeel. A generous splash of fresh lime juice right at the end cuts through richness and lifts all ground spice flavors.
- Storage & Reheating: Red lentil dahl tastes even better the next day as spices deepen! Store in an airtight container for up to 5 days. Red lentils absorb liquid as they stand, so stir in a splash of water or broth when reheating on the stovetop.
