Ingredients
Potato & Corn Base
- 1 lb baby yellow potatoes (such as Yukon Gold or Honey Gold), halved
- 3 ears fresh sweet corn, shucked and cut into 1.5-inch mini rounds
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
Sausage & Seafood
- 12 oz cooked smoked andouille sausage (or kielbasa), sliced into 1/2-inch thick coins
- 1.5 lbs large raw shrimp (21–25 count), peeled and deveined, tails left intact
Seasoned Cajun-Old Bay Butter
- 6 tbsp unsalted butter, melted
- 3 cloves garlic, finely minced
- 1.5 tbsp Old Bay seasoning
- 1 tsp Cajun seasoning (or mild Creole seasoning)
- 1 tbsp fresh lemon juice (from 1/2 lemon)
Garnish & Serving
- 1/4 cup fresh flat-leaf parsley, finely chopped
- 1 fresh lemon, cut into wedges for serving
Equipment
- Heavy 18x13-inch rimmed half-sheet pan
- Parchment paper or heavy-duty aluminum foil
- Large heat-safe glass mixing bowl
- Small microwave-safe bowl or small saucepan
- Chef's knife and heavy wooden cutting board
- Silicone spatulas or metal kitchen tongs
- Measuring spoons and liquid measuring cup
Instructions
- Preheat and prep sheet pan: Position your oven rack in the center position and preheat the oven to 425°F (220°C). Line a heavy 18x13-inch rimmed half-sheet pan with parchment paper for effortless cleanup.
- Par-cook the potatoes: Place the halved baby yellow potatoes in a large microwave-safe bowl with 2 tablespoons of water. Cover tightly with a paper towel and microwave on HIGH for 4 minutes, until the potatoes are just fork-tender and steam rises when uncovered. Drain any excess liquid thoroughly.
- Season the base ingredients: To the bowl with the warm potatoes, add the corn rounds, sliced smoked sausage coins, 2 tablespoons olive oil, salt, and pepper. Toss with a spatula until every surface is lightly coated in oil and spices.
- First roast stage: Spread the seasoned potatoes, corn, and sausage out into a single layer on the prepared half-sheet pan, turning the cut sides of the potatoes face down against the parchment. Roast for 12 minutes until the potato edges turn golden and the sausage slices begin to sizzle and curl slightly at the rim.
- Whisk the garlic-Cajun butter: While the pan roasts, melt the butter in a small bowl. Whisk in the minced garlic, Old Bay seasoning, Cajun seasoning, and fresh lemon juice until smooth, glossy, and fragrant.
- Coat the shrimp: Pat the peeled and deveined shrimp thoroughly dry with paper towels. Place the shrimp in a clean bowl and pour 3 tablespoons of the prepared seasoned garlic butter over them. Toss until every shrimp is evenly coated in the orange-hued spice butter.
- Add shrimp and final roast: Remove the hot sheet pan from the oven. Nestling them between the potatoes and corn, scatter the shrimp across the pan in a single layer. Return the sheet pan to the oven and roast for 6 to 8 minutes, until the shrimp curl into opaque, rosy-pink "C" shapes with solid white centers.
- Glaze and serve: Remove the sheet pan from the oven immediately to prevent overcooking. Drizzle the remaining warm Cajun butter evenly over the hot roasted shrimp, corn, and potatoes. Sprinkle generously with fresh chopped parsley and serve straight from the sheet pan with fresh lemon wedges.

Chef's Tips
- Preventing Rubbery Shrimp: Shrimp cook remarkably fast! Be sure to add them during the final 6 to 8 minutes of roasting. The moment they turn opaque white with a pink tail curve into a "C" shape, pull the pan from the oven so they remain succulent and tender.
- Potato Hack for Speed: Microwaving the baby potatoes with a splash of water for 4 minutes before roasting softens their dense interiors, allowing them to crisp up on the sheet pan in just 12 minutes instead of 30.
- Storage & Make-Ahead: Store leftover shrimp boil in an airtight container in the refrigerator for up to 2 days. Reheat gently in a 350°F oven for 6–8 minutes or in a skillet over medium-low heat with a splash of water to keep the seafood juicy.
