Instructions
- Combine quick-cook white rice, 3 cups chicken broth, and 1/2 teaspoon salt in a medium saucepan.
- Bring the saucepan to a boil over high heat, cover with a lid, reduce heat to low, and cook for 10 minutes until rice is fluffy and liquid is absorbed.

- Melt 1 tablespoon of butter in the 5-quart matte-black Dutch oven over medium-high heat.
- Add the sliced andouille sausage and seasoned chicken thighs to the Dutch oven.
- Sear the meats for 5 minutes, stirring occasionally, until browned on all sides.
- Transfer the seared meats with a slotted spoon to a cream stoneware plate.
- Reduce heat to medium and add the remaining 3 tablespoons of butter and 1/4 cup all-purpose flour to the Dutch oven.
- Whisk the flour and butter mixture constantly for 5 minutes until the roux turns a rich, milk-chocolate brown color.
- Add the diced yellow onion, green bell pepper, and celery (holy trinity) immediately to the dark roux.
- Cook for 3 minutes while stirring constantly until the vegetables soften into the roux.
- Stir in the minced garlic, remaining 1/2 tablespoon Cajun seasoning, dried thyme, bay leaf, salt, and cayenne pepper, cooking for 1 minute until fragrant.
- Slowly pour in 3 cups of chicken broth while whisking constantly to dissolve the roux smoothly.
- Add the seared chicken, andouille sausage, and frozen sliced okra to the Dutch oven.
- Cover with the lid and simmer over medium-low heat for 8 minutes until the chicken is cooked through and the broth thickens into a rich gumbo gravy.
- Discard the bay leaf, ladle the steaming gumbo over fluffy white rice in cream stoneware bowls, and garnish with sliced green onions and chopped parsley.

Chef's Tips
- Roux Watchfulness: Don't step away while making the roux! Whisking constantly over medium heat ensures the flour browns quickly to a chocolate hue in 5 minutes without scorching. If black specks appear, wipe the pot clean and restart.
- Okra Function: Frozen sliced okra adds authentic Creole flavor and acts as a natural thickener. If your family dislikes okra, swap in sliced red bell peppers or zucchini during the last 8 minutes of simmering.
- Make-Ahead Gold: Gumbo tastes even better the next day as the Cajun spices and smoky meats meld together. Store in the fridge for up to 4 days, reheating gently on the stovetop and serving over fresh rice.
