Golden toasted sourdough layered with savory albacore tuna salad and bubbling sharp cheddar cheese, served alongside a crisp, tangy cucumber side.
Ingredients
For the Quick Cucumber Salad:
- 1 English cucumber, thinly sliced into rounds
- 1 tbsp apple cider vinegar
- 1 tbsp extra-virgin olive oil
- 1 tsp sugar
- 1 tbsp chopped fresh dill
- 1/4 tsp kosher salt
For the Classic Tuna Salad:
- 2 cans (5 oz each) solid white albacore tuna in water, drained
- 1/4 cup mayonnaise
- 2 tbsp plain Greek yogurt
- 1 tbsp Dijon mustard
- 2 ribs celery, finely diced
- 2 tbsp finely chopped red onion
- 1 tbsp fresh lemon juice
- 1/4 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
For the Melts & Assembly:
- 4 thick slices artisan sourdough bread
- 2 tbsp unsalted butter, softened
- 4 oz (1 cup) sharp yellow cheddar cheese, coarsely shredded
Equipment
- Matte-black baking sheet
- Parchment paper
- Medium glass mixing bowl
- Small mixing bowl
- Fork and spatula
- Chef's knife
- Warm oak cutting board
- Measuring spoons and cups
Instructions
- Position your oven rack 6 inches below the top heating element and turn on the broiler to HIGH.
- Line your matte-black rimmed heavy baking sheet with a piece of parchment paper.
- Prepare the quick cucumber salad by tossing the thinly sliced English cucumber rounds in a small bowl with apple cider vinegar, extra-virgin olive oil, sugar, fresh dill, and 1/4 teaspoon salt until coated, then set aside in the refrigerator.
- Flake the drained solid white albacore tuna into a medium mixing bowl using a fork until broken into fine bite-sized flakes.
- Add the mayonnaise, Greek yogurt, Dijon mustard, diced celery, chopped red onion, lemon juice, salt, and black pepper to the tuna bowl, folding gently until creamy and combined.
- Spread softened butter thinly over both sides of each artisan sourdough bread slice, then place the bread slices onto the prepared matte-black rimmed heavy baking sheet.
- Broil the buttered sourdough slices under the hot broiler for 2 to 3 minutes until the bread surface turns light golden brown and crisp around the edges.
- Remove the baking sheet carefully from the oven using oven mitts and turn the toasted bread slices over so the pale toasted side faces up.
- Scoop equal amounts of the tuna salad mixture onto each toasted sourdough slice, spreading the tuna evenly out to the edges of the bread.
- Top each tuna layer generously with shredded sharp cheddar cheese, making sure the cheese covers the tuna completely to prevent drying under the broiler.
- Return the matte-black rimmed heavy baking sheet to the broiler and cook for 3 to 4 minutes until the cheddar cheese melts completely, turns bubbly, and develops golden brown spots on top.
- Transfer the open-faced tuna melts onto cream stoneware plates using a spatula and serve immediately alongside the chilled quick cucumber salad.

Chef's Tips
- Pre-Toast the Bread First: Broiling buttered sourdough slices before adding tuna salad creates a moisture barrier that keeps bread wonderfully crispy instead of soggy.
- Cheese Selection: Sharp yellow cheddar offers great color and flavor, but Gruyère, Swiss, or pepper jack work wonderfully.
- Tuna Drain Technique: Press the canned tuna lid firmly over the sink to remove excess liquid so the salad stays rich and thick.
