Sweet corn, tender potatoes, and smoky bacon come together in a velvety, rich chowder made without a blender for ultimate weeknight ease.
Ingredients
For the Chowder Base:
- 6 slices thick-cut bacon, cut into 1/2-inch pieces
- 2 tbsp unsalted butter
- 1 medium yellow onion, finely diced
- 2 ribs celery, finely diced
- 1 medium Yukon Gold potato, peeled and cut into 1/2-inch cubes
- 3 cloves garlic, minced
- 3 tbsp all-purpose flour
For the Broth & Sweet Corn:
- 3 cups low-sodium chicken broth
- 16 oz sweet frozen corn kernels, thawed slightly
- 2 cups half-and-half
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
For Serving & Garnish:
- 1/2 cup sharp cheddar cheese, shredded
- 2 tbsp fresh chives, finely chopped
Equipment
- Cream enamel Dutch oven (5 to 6 quart)
- Slotted spoon
- Paper-towel-lined plate
- Wooden spoon
- Chef's knife
- Warm oak cutting board
- Measuring cups and spoons
- Soup ladle
Instructions
- Place the chopped thick-cut bacon in your cream-colored enamel Dutch oven set over medium heat, cooking until the bacon pieces render their fat and become deeply crispy and golden brown, about 6 to 8 minutes.
- Scoop the crispy bacon out of the Dutch oven using a slotted spoon and transfer it to a paper-towel-lined plate, leaving 2 tablespoons of rendered bacon fat inside the Dutch oven.
- Melt 2 tablespoons of unsalted butter into the warm bacon grease over medium heat until the butter bubbles quietly.
- Stir in the diced yellow onion, diced celery, and cubed Yukon Gold potatoes, cooking until the onions turn soft and translucent with pale golden edges, about 5 minutes.
- Stir in the minced garlic and cook until fragrant and sweet, about 1 minute.
- Sprinkle the all-purpose flour over the sautéed vegetables, stirring continuously with a wooden spoon for 1 to 2 minutes until the flour coats the vegetables evenly and no white powdery streaks remain.
- Pour in the chicken broth gradually while stirring vigorously, scraping up any crisp browned bits stuck to the bottom of the Dutch oven until the liquid becomes smooth and slightly thickened.
- Add the sweet corn kernels, smoked paprika, kosher salt, and black pepper to the Dutch oven, stirring to combine all ingredients thoroughly.
- Bring the liquid to a simmer over medium-high heat, then lower heat to medium-low and simmer uncovered until the diced potato cubes are fork-tender and yield easily when pressed against the side of the pot, about 8 to 10 minutes.
- Reduce the heat to low, pour in the half-and-half, and stir gently until the chowder becomes creamy and thick enough to coat the back of a wooden spoon, heating through for 2 minutes without letting the soup come to a boil.
- Ladle the hot corn chowder into deep cream stoneware bowls, garnishing each bowl with crispy reserved bacon, shredded sharp cheddar cheese, and fresh chopped chives right before serving.

Chef's Tips
- No-Blender Thickening Trick: Uniform 1/2-inch potato cubes cook quickly and release natural starches. Gentle mashing of a few potato pieces against the pot wall creates a creamy texture without a blender.
- Corn Options: Frozen sweet corn works wonderfully year-round. Fresh corn cut off the cob is fantastic in summer, and drained canned corn works well in a pinch.
- Storing & Reheating: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently over medium-low heat with a splash of milk or broth.
