Instructions

  1. Boil water: Fill a large pasta pot with 4 quarts water and bring to a rolling boil over high heat.
  2. Cook noodles: Add 8 ounces lo mein noodles to boiling water and cook for 5 minutes until tender with a firm center.
  3. Drain noodles: Pour cooked noodles into a colander set in the sink to drain hot water completely.
  4. Oil noodles: Transfer warm noodles to a cream stoneware bowl and toss with 1 teaspoon sesame oil until slick.
  5. Slice chicken: Slice chicken breasts on a warm oak cutting board across the grain into ¼-inch thin strips.
  6. Velvet chicken: In a cream stoneware bowl, toss chicken with cornstarch, soy sauce, and sesame oil until coated in a silky glaze.
  7. Whisk lo mein sauce: In a small measuring cup, whisk low-sodium soy sauce, dark soy sauce, oyster sauce, brown sugar, sesame oil, and sriracha until sugar dissolves.
  8. Preheat wok: Place matte-black carbon steel wok over high heat for 2 minutes until faint wisps of smoke rise.
  9. Sear chicken strips: Swirl 1 tablespoon vegetable oil into matte-black carbon steel wok, arrange chicken in a single layer, and cook for 3 minutes until golden brown on edges.
  10. Transfer seared chicken: Use wooden wok spatula to transfer seared chicken strips to a cream stoneware plate, setting aside while keeping wok hot.
  11. Sizzle aromatics: Add remaining 1 tablespoon vegetable oil to matte-black carbon steel wok, add minced garlic and grated ginger, and stir for 30 seconds until pale golden and fragrant.
  12. Stir-fry veggies: Toss shredded cabbage, matchstick carrots, and red bell pepper into matte-black carbon steel wok and stir-fry for 2 minutes until cabbage wilts slightly.
  13. Return chicken and noodles: Add seared chicken strips and oiled lo mein noodles back into matte-black carbon steel wok over medium-high heat.
  14. Glaze lo mein: Pour soy-ginger lo mein sauce over noodles and toss continuously with tongs for 2 minutes until sauce thickens and glazes noodles evenly.
  15. Garnish and serve: Scatter diagonal green onions over lo mein in matte-black carbon steel wok, toss once, and divide among four cream stoneware bowls.

Chef's Tips

  1. Don't overcook noodles: Boil noodles 1 minute shy of package directions so they remain chewy when tossed in the hot wok glaze.
  2. Keep wok piping hot: High heat is crucial for achieving authentic stir-fry aroma and preventing veggies from releasing liquid and soggying.
  3. Make-ahead & storage: Store leftover chicken lo mein in an airtight container in the refrigerator for up to 3 days. Reheat in a warm skillet with 1 tablespoon of water to loosen noodles.
