Instructions

  1. Bring 4 quarts of salted water to a rolling boil in a stockpot over high heat.
  2. Cook 12 oz of pasta for 9 to 10 minutes until al dente, dropping 1 cup of green peas into the boiling water during the final 2 minutes of cooking.
  3. Scoop out 1/2 cup of starchy pasta water using a heat-safe measuring cup before draining.
  4. Drain the pasta and green peas together in a colander.
  5. Heat 3 tablespoons of extra-virgin olive oil and 1 tablespoon of butter in a large saute pan over medium-high heat until shimmering.
  6. Add the sliced green zucchini, yellow zucchini, and bell peppers, sautéing for 3 to 4 minutes until tender-crisp and lightly browned at the edges.
  7. Stir in the minced garlic and halved cherry tomatoes, cooking for 2 minutes until the garlic becomes fragrant and tomato skins begin to soften and pucker.
  8. Add the remaining 1 tablespoon of butter, lemon zest, and 2 tablespoons of fresh lemon juice, scraping up any browned bits on the pan bottom.
  9. Transfer the drained pasta and green peas into the large saute pan with the sautéed vegetables.
  10. Pour in 1/4 cup of the reserved warm pasta water along with 1/2 cup freshly grated Parmigiano-Reggiano cheese.
  11. Toss everything vigorously over medium-low heat for 1 to 2 minutes until a light, silky garlic-lemon butter glaze coats every noodle and vegetable.
  12. Remove from heat, stir in fresh chopped parsley or basil, season with cracked black pepper and red pepper flakes, and serve warm immediately with extra Parmesan.

Chef's Tips

  1. Maintain Veggie Crunch: Don't overcook your vegetables! Sautéing zucchini and peppers quickly on medium-high heat ensures they stay tender-crisp with bright colors rather than becoming soggy.
  2. Seasonal Flexibility: Pasta Primavera is the ultimate clean-out-the-fridge meal. Feel free to swap or add asparagus spears, broccoli florets, sugar snap peas, or sliced cremini mushrooms depending on what's fresh in season.
  3. Storage & Serving Cold: Leftovers keep wonderfully in an airtight container for up to 4 days. Enjoy it warm for dinner or chilled straight from the fridge as a refreshing spring pasta salad for lunch!
