Ingredients
For the Pasta:
- 1 lb (16 oz) penne rigate pasta
- 1 tbsp kosher salt (for boiling water)
For the Vodka Sauce:
- 2 tbsp unsalted butter
- 2 tbsp extra-virgin olive oil
- 1 small yellow onion, finely diced (about 1/2 cup)
- 4 cloves garlic, minced
- 1/4 tsp crushed red pepper flakes
- 3 tbsp tomato paste
- 1 can (14.5 oz) crushed tomatoes
- 1/3 cup unflavored vodka
- 3/4 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese, plus extra for serving
- 1/2 cup reserved starchy pasta cooking water
For Finishing & Garnish:
- 1/4 cup fresh basil leaves, torn into small pieces
- Freshly cracked black pepper, to taste
Equipment
- 6-quart large stockpot
- Deep stainless skillet (12-inch)
- Colander
- Wooden spoon or heat-resistant spatula
- Liquid measuring cup
- Measuring spoons
- Chef's knife and cutting board
Instructions
- Bring 4 quarts of heavily salted water to a rolling boil in a large stockpot over high heat.
- Add 1 lb penne rigate to the boiling water and cook for 9 to 10 minutes, until the pasta is al dente—tender to the bite with a firm, opaque center.
- Scoop out 1/2 cup of starchy pasta water using a heat-safe measuring cup before draining.
- Drain the penne in a colander and set aside near the stove.
- Warm 2 tablespoons of unsalted butter and 2 tablespoons of olive oil together in a deep stainless skillet over medium heat until the butter bubbles gently and coats the pan bottom.
- Add the finely diced yellow onion to the skillet and sauté for 4 to 5 minutes until soft, translucent, and pale golden at the edges.
- Stir in the minced garlic and 1/4 teaspoon crushed red pepper flakes, cooking for 1 minute until fragrant and the garlic turns light golden without scorching.
- Add 3 tablespoons of tomato paste, stirring constantly for 2 to 3 minutes until it darkens to a deep rust-red mahogany color and smells sweet and caramelized.
- Pour in 1/3 cup of vodka, scraping up any caramelized brown bits stuck to the bottom of the deep stainless skillet with a wooden spoon.
- Simmer the vodka for 2 to 3 minutes until the harsh alcohol scent dissipates completely and the liquid reduces by half to a thick glaze.
- Stir in the 14.5 oz can of crushed tomatoes, reduce the heat to medium-low, and simmer gently for 5 minutes until the sauce slightly thickens and tiny bubbles pop across the surface.
- Pour in 3/4 cup heavy cream while stirring continuously until the sauce transforms into a smooth, glossy, vibrant orange-pink velvet.
- Add the drained penne directly into the sauce along with 1/2 cup freshly grated Parmesan cheese.
- Toss vigorously for 1 to 2 minutes until every tube is evenly coated and glossy, pouring in a splash of reserved pasta water if needed to loosen the sauce.
- Remove from heat, stir in torn fresh basil leaves, and serve warm immediately with extra Parmesan and cracked black pepper.

Chef's Tips
- Don't Rush Caramelizing the Paste: Cooking tomato paste until it turns from bright red to deep brick mahogany neutralizes raw acidity and develops rich, umami depth essential for a true vodka sauce.
- Alcohol-Free Alternative: If you prefer not to use vodka, substitute 1/3 cup of low-sodium chicken or vegetable broth mixed with 1 teaspoon of fresh lemon juice. While vodka uniquely enhances tomato aromatics without adding flavor, broth provides good liquid structure.
- Storage and Reheating: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat with a tablespoon of milk or water to restore the emulsion's silky creaminess.
