Instructions

  1. In a small 2-quart saucepan (pot), combine rinsed long-grain white rice, chicken broth, 1 tablespoon butter, garlic powder, and 1/2 teaspoon kosher salt.
  2. Bring the liquid to a rolling boil over high heat until vigorous bubbles break across the surface.
  3. Cover the small pot with a tight-fitting lid, reduce heat to low, and simmer undisturbed for 15 minutes until all liquid is absorbed and the rice grains are tender.
  4. Remove the pot from heat, keep covered for 5 minutes, then fluff the rice with a fork and gently fold in lemon zest, 1 tablespoon lemon juice, and chopped fresh parsley until fragrant.
  5. While the rice cooks, pat the 4 tilapia fillets thoroughly dry with paper towels to ensure a golden pan crust.
  6. Season both sides of the tilapia fillets evenly with kosher salt, black pepper, and paprika on a warm oak cutting board.
  7. Heat olive oil in a 12-inch matte-black nonstick skillet over medium-high heat until the oil shimmers across the surface.
  8. Place the seasoned tilapia fillets into the hot nonstick skillet in a single layer without overcrowding.
  9. Sear undisturbed for 3 to 4 minutes until the bottom turns golden-brown and the edges turn opaque white.
  10. Flip the fillets carefully using a flexible fish spatula.
  11. Melt 3 tablespoons unsalted butter and minced garlic into the open spaces of the nonstick skillet.
  12. Spoon the foaming garlic butter continuously over the tops of the fish fillets for 3 minutes until the fish flakes easily with a fork and turns opaque throughout.
  13. Pour 2 tablespoons fresh lemon juice into the skillet, swirling it into the warm garlic butter sauce for 30 seconds until glossy and emulsified.
  14. Remove the nonstick skillet from heat.
  15. Divide the warm, fluffy lemon herb rice among 4 cream stoneware dinner plates or shallow bowls.
  16. Place a seared garlic butter tilapia fillet on top of each bed of rice.
  17. Spoon the warm lemon-garlic butter pan sauce from the nonstick skillet over the tilapia and rice, garnishing with fresh lemon slices and chopped parsley before serving immediately.

Chef's Tips

  1. Delicate Fish Handling: Tilapia fillets are tender and lean. Use a wide, flexible fish spatula to flip them gently so they remain intact without breaking apart in the skillet.
  2. Fish Substitutions: Cod, sole, flounder, or snapper can be used in place of tilapia. Adjust cooking time by 1-2 minutes depending on thickness.
  3. Storage & Reheating: Store leftover tilapia and lemon rice together or separately in airtight containers in the fridge for up to 2 days. Reheat gently in a covered skillet over low heat with a splash of chicken broth or extra butter to keep the fish moist.
