30-Minute Meatball Subs
Tender homemade beef meatballs simmered in rich garlic marinara, nestled inside garlic-buttered toasted hoagie rolls, and blanketed under melted, golden broiled provolone cheese.
Ingredients
For the Quick Meatballs:
- 1 pound 90% lean ground beef
- 1/3 cup panko breadcrumbs
- 1/4 cup freshly grated Parmesan cheese
- 1 large egg, beaten
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly cracked black pepper
- 1 tablespoon extra-virgin olive oil (for searing)
For the Sauce & Sub Assembly:
- 2 cups high-quality canned marinara sauce
- 4 Italian sub rolls or hoagie rolls (6 inches long), split open
- 2 tablespoons unsalted butter, softened
- 1/4 teaspoon garlic powder
- 8 slices provolone cheese (about 6 ounces total)
- 2 tablespoons fresh flat-leaf parsley, finely chopped
Equipment
- Heavy 12-inch enamelled cast-iron skillet
- Commercial half-sheet baking pan
- Medium mixing bowl
- Tongs
- Wooden spoon
- Chef's knife and cutting board
- Measuring spoons and cups
Instructions
- In a medium mixing bowl, combine ground beef, panko breadcrumbs, grated Parmesan, beaten egg, minced garlic, Italian seasoning, salt, and black pepper.
- Mix the ingredient mixture gently with your hands just until combined, avoiding overworking the meat so the meatballs remain tender.
- Roll the meat mixture into 16 equal meatballs, each roughly 1.5 inches in diameter.
- Heat 1 tablespoon of olive oil in a heavy 12-inch enamelled cast-iron skillet over medium-high heat until shimmering.
- Add the meatballs to the skillet in a single layer and sear for 5 to 6 minutes, turning occasionally with tongs, until deep golden-brown crust forms on all sides.
- Pour the 2 cups of marinara sauce carefully into the skillet around the meatballs, stirring gently with a wooden spoon to coat them.
- Reduce the heat to medium-low, cover the skillet partially, and simmer for 10 minutes until the meatballs are thoroughly cooked through to an internal temperature of 165°F and the sauce is thick and glossy.
- Preheat your oven broiler to HIGH while the meatballs finish simmering, and line a commercial half-sheet baking pan with parchment paper.
- Mix the softened butter and garlic powder in a small ramekin, then spread evenly over the cut interior of each split sub roll.
- Place the rolls open-faced on the baking sheet and broil 1 to 2 minutes until the garlic butter melts and the roll edges turn light golden brown.
- Remove the toasted rolls from the oven and spoon 4 cooked meatballs with plenty of thick marinara sauce into each toasted sub roll.
- Drape 2 slices of provolone cheese over each sub, overlapping them so the meatballs and sauce are fully draped in cheese.
- Return the sub rolls under the broiler for 2 minutes until the provolone cheese is completely melted, soft, and lightly blistered with dark golden brown spots.
- Remove from the broiler, garnish with fresh chopped parsley, and serve immediately while hot and melty.

Chef's Tips
- Gentle Handling: When mixing the meatball mixture, combine ingredients with a light hand. Compacted or overworked ground beef produces dense, rubbery meatballs rather than soft, tender bites.
- Broiler Watchfulness: Keep your eye on the subs during the final broiling step. Broilers go from perfectly golden melted cheese to scorched crust in less than 30 seconds!
- Frozen Shortcut: If you are pressed for time, swap the homemade meatballs for 16 high-quality pre-cooked frozen meatballs. Simply thaw them briefly in the microwave before simmering in marinara sauce for 10 minutes.
