Chef's Tips
- Prevent Tortilla Cracking: Microwave flour tortillas in damp paper towels for 20 to 30 seconds before rolling to make them soft and pliable so they roll tightly without tearing or splitting.
- Seam-Side Down Placement: Place rolled flautas seam-side down on baking sheet. Weight of roll seals tortilla edges as it bakes, preventing them from unrolling without toothpicks.
- Make-Ahead & Freezing: Assemble and roll flautas ahead, then freeze unbaked in a single layer on a baking sheet. Once solid, transfer to a freezer bag for up to 3 months. Bake straight from frozen at 425°F for 20 to 22 minutes!
