Instructions

  1. Heat olive oil: Heat 2 tablespoons olive oil in a matte-black enameled Dutch oven over medium heat for 2 minutes until shimmering.
  2. Sauté mirepoix: Add diced yellow onion, sliced carrots, and celery to the matte-black enameled Dutch oven and cook for 5 minutes until soft and translucent.
  3. Sizzle garlic and paste: Add minced garlic and tomato paste, stirring for 1 minute until fragrant and dark brick-red.
  4. Add tomatoes and broth: Pour in diced tomatoes with juices, vegetable broth, Italian seasoning, salt, black pepper, red pepper flakes, and nestle the parmesan rind into the matte-black enameled Dutch oven.
  5. Bring broth to boil: Cover matte-black enameled Dutch oven and bring to a rapid boil over high heat for 3 minutes until steam escapes.
  6. Add pasta and beans: Uncover, stir in ditalini pasta and drained Cannellini beans, and lower heat to medium.
  7. Simmer pasta: Cook uncovered for 6 minutes, stirring occasionally with a wooden spoon, until pasta turns tender.
  8. Fold in zucchini: Add diced zucchini to the matte-black enameled Dutch oven and simmer for 3 minutes until bright green and crisp-tender.
  9. Wilt baby spinach: Turn off heat, remove parmesan rind, and stir fresh baby spinach into the matte-black enameled Dutch oven for 1 minute until wilted.
  10. Ladle and garnish: Ladle hot minestrone into cream stoneware soup bowls; top generously with grated Parmesan cheese and chopped flat-leaf parsley.

Chef's Tips

  1. Freeze parmesan rinds: Store leftover hard parmesan rinds in the freezer and drop one into simmering soups for instant savory umami flavor.
  2. Keep pasta al dente: Cook ditalini pasta just until tender, as it will continue absorbing broth in hot bowls while serving.
  3. Make-ahead & storage: Refrigerate minestrone in an airtight container for up to 4 days. Add a splash of extra broth when reheating if pasta absorbs liquid.
