Instructions

  1. Boil water for noodles: Fill a large stainless steel stockpot with 4 quarts of salted water and bring to a rapid rolling boil over high heat.
  2. Cook egg noodles: Add wide egg noodles to boiling water in the stainless steel stockpot and cook for 7 minutes until tender yet firm to the bite (al dente).
  3. Drain and butter noodles: Drain noodles in a colander, return to stainless steel stockpot, toss with 1 tablespoon butter and chopped parsley until glossy, and cover to keep warm.
  4. Sear sirloin strips: Heat 1 tablespoon olive oil in a cream enameled skillet over high heat until shimmering, add sirloin strips in a single layer, and cook for 3 minutes without moving until deep mahogany brown on bottom.
  5. Transfer beef: Turn sirloin strips once for 30 seconds, then transfer cooked beef to a cream stoneware plate, reserving juices in pan.
  6. Sauté mushrooms and onions: Melt 1 tablespoon butter in the cream enameled skillet over medium heat, add sliced cremini mushrooms and chopped onions, and cook for 5 minutes until mushrooms turn golden brown and release their liquid.
  7. Add garlic and flour: Stir minced garlic into the cream enameled skillet for 30 seconds until fragrant, then sprinkle 2 tablespoons all-purpose flour over mushrooms and cook stirring constantly for 60 seconds until no raw white flour remains.
  8. Whisk beef broth and sauce: Slowly pour low-sodium beef broth, Worcestershire sauce, and Dijon mustard into the cream enameled skillet while whisking constantly, scraping up rich browned fond from pan bottom.
  9. Simmer sauce until thick: Bring sauce to a simmer for 3 minutes until thickened into a silky, rich brown gravy that coats the back of a spoon.
  10. Stir in sour cream and beef: Reduce skillet heat to low, whisk in room-temperature sour cream until smooth and velvety, then return seared sirloin and accumulated juices to the cream enameled skillet and simmer for 2 minutes until hot (do not boil).
  11. Serve over noodles: Divide buttery egg noodles among four wide cream stoneware bowls, spoon hot creamy beef stroganoff sauce generously over top, and garnish with fresh chopped parsley.

Chef's Tips

  1. Use room-temperature sour cream: Cold sour cream added directly to hot sauce can curdle. Measure sour cream early and let it sit on the counter, or temper it with a spoonful of warm pan broth before stirring in.
  2. Don't crowd the beef: Sear sirloin in two batches if necessary. Crowding the skillet causes meat to steam instead of getting that flavorful browned crust.
  3. Make-ahead & storage: Store stroganoff sauce and egg noodles in separate airtight containers in the fridge for up to 3 days. Reheat sauce gently over low heat, adding a splash of beef broth if needed to restore creaminess.
